Healthy Crock Pot Black Eyed Peas


This variation of the traditional New Year’s black eyed peas are not only delicious, but also vegetarian & low sodium.

Best of all, no slaving over a hot stove; let the crock pot do the cooking for you while you enjoy your family/friends!

Great served over whole grain or brown rice.

Preparation Time:  5 minutes
Cook Time in Crock Pot:   6 hours
Number of Servings:  12


5 Cups of Water

1 lb bag of Black Eye Peas, Dry

1 Medium Onion Diced

2 Cloves of Fresh Garlic Diced

1/2 tsp of Cayenne Pepper

1 & 1/2 tsp of Ground Cumin

1 tsp of Ground Black Pepper

2 whole Bay leaves


Sort and Rinse Black Eye Peas.  Place all ingredients in the crockpot. Stir and cover.  Cook on low for 6 – 7 hours.  Remove bay leaves before serving.  Makes 12 half cup servings.

**Note:  Traditional Black Eye peas get their flavor from ham hock.  The amount of spices suggested is enough to give the peas flavor and kick, but still mild enough for children. These spices can be adjusted to suit your taste. There is no salt added to keep these low sodium.
