Chopped Greek Salad


A quick and simple dinner tomorrow night made from the leftover chicken of tonight.


2 1/2 tablespoons red-wine vinegar
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
3 cups chopped romaine lettuce
1 1/4 cups chopped cooked leftover chicken, (about 6 ounces; see Tip)
1 medium tomato, chopped
1/2 medium cucumber, peeled, seeded and chopped
1/4 cup finely chopped red onion
1/4 cup sliced ripe black olives
1/4 cup crumbled feta cheese

Whisk together the first 6 ingredients in a large bowl, add remaining ingredients and toss to coat.

Want to add even more vitamin packed vegetables to this simple dish?  Add chopped bell peppers or broccoli to the mix!
